V\u00a0pr\u016fb\u011bhu cel\u00e9ho procesu v\u00fdroby v\u00edna se pou\u017e\u00edv\u00e1 modern\u00ed technologie. \u00a0N\u00e1doby pro modifikaci, udr\u017eov\u00e1n\u00ed a p\u00e9\u010di o v\u00edno \u200b\u200bjsou vyrobeny z nerezu . Pro vinifikace \u010derven\u00e9ho v\u00edna, pou\u017e\u00edv\u00e1me modern\u00ed vinifik\u00e1tory \u00a0s kapacitou 10,000 litr\u016f vybaven\u00e9 automatick\u00fdm syst\u00e9mem chlazen\u00ed a orosen\u00ed . Macerace trv\u00e1 7 a\u017e 12 dn\u00ed. Teplota kva\u0161en\u00ed je kontrolov\u00e1na a v p\u0159\u00edpad\u011b pot\u0159eby je lze chladit v\u00edc nebo oh\u0159\u00e1t. V pr\u016fb\u011bhu vinifikace b\u00edl\u00fdch v\u00edn se pou\u017e\u00edv\u00e1 modern\u00ed hroznov\u00e1 bruska a pneumatick\u00e9 tlakov\u00e9 za\u0159\u00edzeni. Vinifikace se prov\u00e1d\u00ed s\u00a0permanentn\u00edm \u0159\u00edzen\u00edm teploty kva\u0161en\u00ed. V\u011bt\u0161inou fermentace se prov\u00e1d\u00ed p\u0159i teplot\u011b 12 stup\u0148\u016f Celsia. Umo\u017e\u0148uje to v\u00fdrobu b\u00edl\u00fdch v\u00edn s exotickou v\u016fn\u00ed. Kvalita a jakost v\u00edna je st\u00e1le kontrolov\u00e1na v soukrom\u00e9 laborato\u0159i s modern\u00edm vybaven\u00edm. V\u00edno se st\u00e1\u010d\u00ed do lahv\u00ed ru\u010dn\u011b a v ka\u017ed\u00e9 l\u00e1hvi je c\u00edtit nad\u0161en\u00ed a l\u00e1ska.<\/p>\n<p><b>Postup v\u00fdroby<\/b><\/p>\n<p>&nbsp;<\/p>\n<p><b>Sb\u011br hrozn\u016f<\/b><\/p>\n<p>Doba sklizn\u011b neboli vinobran\u00ed b\u00fdv\u00e1 od konce srpna do konce \u0159\u00edjna. Stupe\u0148 zralosti hrozn\u016f se stanov\u00ed podle:<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0chuti hrozn\u016f<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0\u00a0odd\u011blov\u00e1n\u00ed bobulek od stopek<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 tlou\u0161\u0165ky slupek<\/p>\n<p style=\"text-align: justify;\">Hrozny se sb\u00edraj\u00ed ru\u010dn\u011b vina\u0159sk\u00fdmi n\u016f\u017ekami a kladou se do men\u0161\u00edch 15-20kg plastov\u00fdch p\u0159epravek. Plastov\u00e9 p\u0159epravky se nalo\u017e\u00ed na dopravn\u00ed prost\u0159edek a vezou se p\u0159\u00edmo do vin\u00e1rny k\u00a0n\u00e1sledn\u00e9mu zpracov\u00e1n\u00ed.<\/p>\n<p><b>Odzrn\u011bn\u00ed<\/b><\/p>\n<p style=\"text-align: justify;\">D\u016fle\u017eit\u00fdm krokem po sklizni je odd\u011blen\u00ed t\u0159apin od bobul\u00ed. Tento proces se mus\u00ed tak\u00e9 prov\u00e1d\u011bt velice \u0161etrn\u011b, proto\u017ee v p\u0159\u00edpad\u011b poru\u0161en\u00ed jad\u00e9rek v bobuli by se do v\u00edna dostaly ne\u017e\u00e1douc\u00ed ho\u0159k\u00e9 l\u00e1tky a proces v\u00fdroby by byl u\u017e ve sv\u00e9m po\u010d\u00e1tku poka\u017een. Takto upraven\u00e9 bobule s v\u00edce \u010di m\u00e9n\u011b naru\u0161enou slupkou se naz\u00fdv\u00e1 rmut.<\/p>\n<p><b>Lisov\u00e1n\u00ed<\/b><\/p>\n<p style=\"text-align: justify;\">Rmut se pot\u00e9 lisuje. U \u010derven\u00fdch v\u00edn se nech\u00e1v\u00e1 prokv\u00e1\u0161et rmut n\u011bkolik dn\u00ed 7-12 u leh\u010d\u00edch v\u00edn, a\u017e 30 dn\u00ed u t\u011b\u017e\u0161\u00edch pln\u011bj\u0161\u00edch v\u00edn. B\u011bhem kva\u0161en\u00ed se do v\u00edna uvol\u0148uj\u00ed ze slupek t\u0159\u00edsloviny a barviva. Optim\u00e1ln\u00ed teplota tohoto procesu je kolem 29 stup\u0148\u016f. Pro maxim\u00e1ln\u00ed extrakci barevn\u00fdch pigment\u016f se mus\u00ed tzv. rmutov\u00fd klobouk pono\u0159ovat st\u00e1le do mo\u0161tu. \u00a0 \u00a0 \u00a0 \u00a0U b\u00edl\u00fdch v\u00edn se m\u016f\u017ee rmut lisovat t\u00e9m\u011b\u0159 okam\u017eit\u011b, ale n\u011bkolik hodin se tak\u00e9 nech\u00e1v\u00e1 ve styku se slupkami, aby se do mo\u0161tu uvolnilo v\u011bt\u0161\u00ed mno\u017estv\u00ed aromatick\u00fdch l\u00e1tek.<\/p>\n<p><b>Kva\u0161en\u00ed (fermentace)<\/b><\/p>\n<p style=\"text-align: justify;\">Fermentace neboli kva\u0161en\u00ed je proces, kdy kvasinky prom\u011b\u0148uj\u00ed jednoduch\u00e9 cukry (gluk\u00f3zu a frukt\u00f3zu) na alkohol a oxid uhli\u010dit\u00fd, kter\u00fd unik\u00e1 do vzduchu. V t\u00e9to f\u00e1zi se vytv\u00e1\u0159\u00ed alkohol a mo\u0161t vinn\u00e9 r\u00e9vy se tak pomalu m\u011bn\u00ed na v\u00edno. Je nutn\u00e9 tomuto procesu v\u011bnovat pat\u0159i\u010dnou pozornost. \u201e\u0158\u00edzen\u00e1 fermentace\u201c prob\u00edh\u00e1 v nerezov\u00fdch tank\u00e1ch. P\u0159i tomto zp\u016fsobu fermentace se chlad\u00ed pl\u00e1\u0161t\u011b nerezov\u00fdch tank\u016f tak, aby jejich teplota nezap\u0159\u00ed\u010dinila vysok\u00e9 odpa\u0159ov\u00e1n\u00ed aromatick\u00fdch l\u00e1tek. N\u011bkter\u00e1 v\u00edna se vyr\u00e1b\u00ed za p\u0159\u00edstupu vzduchu tzv. \u201eoxidativn\u00ed metodou\u201c, kdy\u00a0mo\u0161t\u00a0nebo\u00a0v\u00edno\u00a0je vystaveno dlouhodob\u011b \u00fa\u010dink\u016fm vzduchu (oxidace).<\/p>\n<p><b>\u0160kolen\u00ed v\u00edna<\/b><\/p>\n<p>Dal\u0161\u00ed d\u016fle\u017eit\u00e1 f\u00e1ze p\u0159i v\u00fdrob\u011b je \u0161kolen\u00ed. T\u00edm rozum\u00edme celou \u0159adu z\u00e1krok\u016f prov\u00e1d\u011bn\u00fdch za \u00fa\u010delem zv\u00fd\u0161en\u00ed kvality budouc\u00edho v\u00edna.<\/p>\n<ul>\n<li><b>S\u00ed\u0159en\u00ed v\u00edna<\/b>\u00a0&#8211; bez s\u00ed\u0159en\u00ed, kter\u00e9 chr\u00e1n\u00ed v\u00edno p\u0159ed ne\u017e\u00e1douc\u00edm znehodnocen\u00edm, nelze v\u00edno prakticky vyrobit. Je nutn\u00e9 v\u0161ak s\u00ed\u0159it velmi \u0161etrn\u011b.<\/li>\n<li><b>\u010ci\u0159en\u00ed\u00a0v\u00edna<\/b>\u00a0&#8211; proces, kter\u00fdm se z v\u00edna odstra\u0148uj\u00ed kal\u00edc\u00ed \u010d\u00e1stice a nestabiln\u00ed l\u00e1tky. Nej\u010dast\u011bj\u0161\u00edm prost\u0159edkem je vaje\u010dn\u00fd b\u00edlek\u00a0nebo\u00a0bentonit.<\/li>\n<li><b>Filtrace<\/b>\u00a0&#8211; proces, kde prost\u0159ednictv\u00edm filtr\u016f odstra\u0148ujeme mikroorganismy a kal\u00edc\u00ed \u010d\u00e1stice. Existuje n\u011bkolik druh\u016f\u00a0filtrace.<\/li>\n<li><b>Zr\u00e1n\u00ed v\u00edna<\/b>\u00a0\u2013 zran\u00ed v\u00edna prob\u00edh\u00e1 v nerezov\u00fdch tank\u00e1ch. \u00a0K\u00a0v\u00fdrob\u011b v\u00edna pou\u017e\u00edv\u00e1me tak\u00e9 dubov\u00e9 sudy, \u00a0typu barrique.<\/li>\n<\/ul>\n<h3>Barrique<\/h3>\n<p style=\"text-align: justify;\">Je dubov\u00fd sud o objemu 225 l (tato velikost m\u00e1 optim\u00e1ln\u00ed pom\u011br styku v\u00edna se d\u0159evem) p\u016fvodem z Bordeaux.\u00a0 Jedn\u00e1 o\u00a0dub\u00a0b\u00edl\u00fd z rodu Genus Quercus. V\u00a0na\u0161em vina\u0159stv\u00ed pou\u017e\u00edv\u00e1me duby francouzsk\u00e9.<\/p>\n<p style=\"text-align: justify;\">P\u0159i zr\u00e1n\u00ed v mal\u00fdch dubov\u00fdch sudech doch\u00e1z\u00ed k l\u00e1tkov\u00e9 v\u00fdm\u011bn\u011b mezi v\u00ednem a d\u0159evem, p\u0159i kter\u00e9 v\u00edno absorbuje \u0159adu l\u00e1tek (laktony, aldehydy nebo\u00a0t\u0159\u00edsloviny) , kter\u00e9 ovliv\u0148uj\u00ed jeho budouc\u00ed chu\u0165 a charakter. Barikov\u00e9 sudy se v\u0161ak nepou\u017e\u00edvaj\u00ed pouze pro to, aby se\u00a0do\u00a0v\u00edna dostal t\u00f3n vanilky, ale hlavn\u011b z d\u016fvod\u016f zr\u00e1n\u00ed v p\u0159irozen\u00e9m prost\u0159ed\u00ed. V\u00edno se m\u016f\u017ee nechat na kvasnic\u00edch, kter\u00e9 v\u00edno chr\u00e1n\u00ed a udr\u017euj\u00ed tak jeho p\u0159irozenou rovnov\u00e1hu.<\/p>\n<p>Sudy typu\u00a0barrique\u00a0se pou\u017e\u00edvaj\u00ed ke zr\u00e1n\u00ed v\u00edna pouze t\u0159ikr\u00e1t.
